This thesis advocates for the use of Carl Jung’s psychoanalytic theory in folkloristics by examining the role of the caduceus and the ouroboros in alchemy as a case study. Although a Jungian lens has not been widely accepted by folklorists, it can and should be applied to folklore, particularly in the context of binary oppositions. Folklorists such as Alan Dundes have been harshly critical of this perspective. However, Dundes also stressed the importance of binaries in folklore. To better develop my online courses at Lincoln University, I attended Quality Matters 2019 Annual Conference in Grapevine, Texas from Sunday, October 27th to Tuesday, October 29th. I began the conference by attend two workshops on Sunday: one that addressed researching teaching methods in online courses, and another on online course development. While both workshops were productive, the online course development workshop was particularly helpful. It was taught by two co-authors of a recent manual on online course development. Background: Low-income men’s use of food pantries, and dietary intakes including pulses is understudies. Food pantries can help, but resource restriction limits ability to prepare meals. Convenience foods may not be optimal for nutrition. Pulses (beans, peas, lentils, and chickpeas) count as a vegetable and provide fiber, iron, folate, and other shortfall micronutrients. Increased pulse consumption could improve diet quality. Purpose: The study evaluated low-income men’s use dietary intakes including pulses. This paper introduces the principles of Universal Design for Learning (UDL), an inclusive pedagogical principle that works to make instruction accessible for all by incorporating different needs of learners into instructional design. This article provides a brief analysis of the literature on UDL within the field of academic libraries and focuses specifically on library instruction. The paper then concludes with a comprehensive case study of the authors’ journey to actively incorporate UDL into their information literacy instruction sessions over a two-semester period, including lessons learned throughout their process.
